We introduce to you, this years most unique and rare expression, Redbreast Dream Cask Zenith Edition.
This 38-year old single pot still is the seventh, and final, edition in the Dream Cask series. Our blenders sought out an extraordinary cask as a fitting tribute to the collection. First laid down in 1985 in second fill bourbon barrels, this exceptional whiskey was then re-casked in 2013 into oloroso sherry butts. The result is a truly satisfying finale to the remarkable story of our signature style.

Tasting notes
Aged to perfection by Master Blender Dave McCabe and Master Blender Emeritus Billy Leighton, Redbreast Dream Cask Zenith Edition embraces the art of finely tuning the flavour of whiskey during maturation through the skill of recasking, a method that honours both Redbreast’s heritage and future.
NOSE
A wonderful and rich combination of herbs and spices with notes of menthol, liquorice, rosemary, and allspice. Fruit elements offer aromas of black cherry and blackcurrants with hints of mango and orange peel. Many years of ageing in a combination of seasoned oak casks give an impression of antique furniture, delicate wood resin and linseed.
TASTE
Tropical and fleshy fruits intermingle with luscious, smooth waves of vanilla and chocolate. Soft oak tannins eventually shine through, enhancing the pot still spices and showcasing notes of black peppercorns, freshly picked garden mint and a mild ginger spice. The fruits continue to build, working in harmony with the nutty undertones. The influences of Oloroso sherry add further intricacy to this complex whiskey.
FINISH
Lingering, with the spices eventually fading, leaving the fruits and oak to have the final word.

Upon entering the ballot, your bank card details will be taken, but will not be charged at entry to the ballot, nor will it be charged if you happen to be a successful applicant. What happens if my ballot entry is successful?
If you ballot entry is successful, you can expect the following actions to occur:
STEP ONE
On Monday, May 27th, at 12pm IST, winners will be chosen at random and alerted to their success via an email from The Birdhouse – please ensure to check your inbox and junk mail.
STEP TWO
A link to purchase will be included within every successful entrant’s email, in which they will have 48 hours to complete the transaction.
STEP THREE
If a winning entrant fails to complete their purchase within this 48 hour window, their link will expire and a new winning applicant will be chosen.
STEP FOUR
After submitting your details and confirming your transaction, you will receive a confirmation email from our Midleton Distillery Collection email address which will contain your delivery information.
