This is a dream that spans 3 decades, two wood types and a final single cask. Hand selected by Redbreast Master Blender Billy Leighton, this cask was chosen as his ‘Dream Cask’ to celebrate World Whisky Day 2017. This truly is a rare and unique whiskey.

The Process of Redbreast

Carefully matured since 1985.

This Single Pot Still Irish Whiskey was first set down on October 31st 1985 as part of the first ever parcel of Redbreast 21. However, this bird was destined to keep flying. After spending 25 years in refill American oak ex-bourbon barrels, it was then moved for a further 7 years to a first-fill Oloroso sherry butt.

Back in 2017 Dream Cask was unveiled by Redbreast Master Blender Billy Leighton to mark a special celebration of World Whisky Day, with unanimous praise from all those who had a chance to taste it. This reception, and Billy's encouragement, really only left us with one option - to bottle every last drop of Dream Cask to be shared with fans far and wide.
