Highball

Redbreast Lustau, with its spicy, fruity, sherry and toasted wood notes, makes this highball a sophisticated riff on a classic. Fino sherry and simple syrup add a little bit of complexity and sweetness, while the bitters bring more depth. Try using a different flavor of (unsweetened) soda water, like orange, lemon or grapefruit, to unlock new variations.

Steps

Fill a cocktail shaker with ice and add Redbreast, fino sherry, simple syrup and bitters. Shake until cold (about 10-15 seconds).

Strain into a highball glass over fresh ice. Top with soda water and stir gently to mix. Garnish with an orange or blood orange wheel.
